Vin Jaune 2019
Savagnin, the sole grape variety, is the jewel of our vineyard and is found almost exclusively in the Jura region. It draws its full expression from our grey and blue marl soils. A grape with a thick, hard skin, it is the last to be harvested, just before the first frosts. Its high sugar and acidity levels allow for highly original winemaking and aging techniques.

Culture
Diverse terroirs, predominantly marl and limestone. Planting density of 6,500 vines per hectare. Our wines are produced using sustainable farming practices, preserving the environment and biodiversity in our soils. Since 2015, Domaine Baud has been Terras Vitis certified.
Winemaking and aging
After manual harvesting and static pressing, fermentation takes place using indigenous yeasts in order to preserve the typicity of our terroir, and this is done at low temperature.
This is followed by aging in 228-litre barrels, without any additions or topping up, which most often predestins it to become Vin Jaune after aging for at least 6 years and 3 months.
The veil of yeast that develops on the surface protects the wine and gives it its characteristic aromas.
As for evaporation (38% in 6 years) it contributes to the concentration of this wine, which can exceed 14% alcohol.
Tasting notes
To the eye, its color is a deep yellow with golden undertones: it is old gold.
This is a powerful and full-bodied wine, developing aromas of green walnuts, hazelnut, almond, and even truffle and curry that reappear on the palate. A round and balanced finish completes the palate, echoing the aromas detected on the nose. Its structure makes it an unforgettable wine.
It should be served slightly chilled and the bottle opened a few hours before consumption.
Service
Serve slightly chilled, at approximately 15°C. An excellent kitchen aid, it will enhance all dishes made with crème fraîche and mushrooms, as well as exotic and spicy dishes. It will be superb with pan-seared foie gras and magnificent with coq au Vin Jaune and morels, langoustine à l'armoricaine, or grilled lobster. It is the perfect accompaniment to a long-aged Comté cheese.
Aging
Its aging potential is legendary: it can last up to a century, but this wine can be consumed from 8 to 9 years after harvest.
